The Secret Sauce Behind Saus at Bow Market

At Saus at Bow Market (you guessed it!) it’s all about the sauce. Although Tanya Walker and Chin Kuo have cracked the code on frying up the perfect hand-cut french fries, it's their long and inventive list of sauces that really makes them shine. Offering a vegan and vegetarian take on their big sis restaurant Saus in downtown Boston, Saus at Bow Market is sure to feed your appetite!

What inspired you to start a business? How did this feeling grow once you actually started your business?

We wanted to do what we loved—food! In 2011, we were recent college grads who had a wild idea and were working jobs we didn't love, jobs that didn't fill us up (so to speak). We wanted to be a part of our community and become a part of the Boston landscape, which we definitely feel we’ve accomplished. Opening our second location here in Bow Market in 2018 and becoming a part of Union Square felt like joining a family. We're feeding our neighbors and friends. Ultimate goal reached.

What aspect of your business makes you most proud to be a business leader in our community?

We are a small business, so we can create positions for people who want to grow with us. Like when a line cook wants to help design merch, or a cashier wants to learn social media. Creating these opportunities for them to grow and nurture their passions is very fulfilling—they can begin a career with us. We've actually had this happen! Someone working on our social media got hired by a marketing company and her resume was largely our social media presence.  

We also love that our team meets other small businesses in Union Square and gets exposed to different ideas and business models, and sees how Union Square operates as a microcosm in Somerville. Businesses join the Union Square community, make friends, and participate in the unique events held here. Watching connections being made and new opportunities become available to them is so rewarding.

How do you #LoveUnionSquare?

The best part of being a part of Union Square is the events, hands down. This community comes together like none other that I've been a part of. From Fluff Fest to PorchFest, this Square knows how to throw a party and celebrate.
